Ingredients

Before diving into the preparation process, gather the following ingredients:

– 500g chicken pieces
– 1 cup besan (gram flour)
– 1/2 cup all-purpose flour
– 1/4 cup cornstarch
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1 teaspoon garlic paste
– 1 teaspoon ginger paste
– 1 teaspoon salt
– 1/2 teaspoon garam masala
– 1/4 teaspoon black pepper powder
– 1/4 teaspoon ajwain (carom seeds)
– 2 tablespoons lemon juice
– 2 green chilies, finely chopped
– 1 tablespoon oil
– 1 tablespoon mustard oil
– 1 tablespoon sesame oil
– 1 tablespoon poppy seeds
– 1 tablespoon urad dal
– 1 tablespoon chana dal
– 1 tablespoon cumin seeds
– 1 tablespoon curry leaves
– 2 tablespoons oil for frying

Preparation

1. Start by washing the chicken pieces thoroughly and pat them dry with a paper towel.
2. In a bowl, mix the besan, all-purpose flour, cornstarch, turmeric powder, red chili powder, cumin powder, coriander powder, garlic paste, ginger paste, salt, garam masala, black pepper powder, and ajwain.
3. Add the lemon juice and mix well to form a thick paste.
4. Dip the chicken pieces into the paste, ensuring they are well-coated.
5. Heat the oil for frying in a deep pan over medium heat.
6. Once the oil is hot, gently slide the chicken pieces into the oil.
7. Fry the chicken until it turns golden brown and crispy.
8. Remove the chicken from the oil and keep it aside on a paper towel to drain the excess oil.

Seasoning

1. In a separate pan, heat the mustard oil, sesame oil, and 2 tablespoons of oil.
